Shanah Tovah with Green Apple Recipes from DASHA®

Shanah Tovah from DASHA® to all those celebrating Rosh Hashanah this week.  May you enjoy some quality time with friends and family as you celebrate!  DASHA® loves green apples, so we’ve included two recipes – one for the main course and one for dessert, that you can use for your Rosh Hashanah celebration this year, whether you’re hosting or attending one as a guest.  Read below for the instructions – but beware, your mouth is likely to start watering!

HONEY BAKED CHICKEN WITH TANGY APPLE*

Ingredients:

One 4-pound chicken, cut into 8 pieces

3 tablespoons olive oil

Kosher salt

freshly ground black pepper

2 tablespoons honey

2 shallots,

2 Granny Smith apples, sliced, cored and cut into ¼-inch slices

1/2 cup chicken broth

Freshly squeezed juice of 1/2 lemon

1 teaspoon Dijon mustard

Directions:

Preheat the oven to 425˚ F and arrange a rack in the top third of the oven. In a wide, ovenproof skillet or small (9-by-13-inch) roasting pan, toss the chicken pieces with 1 tablespoon of the olive oil and season them well with salt and pepper. Arrange the pieces skin side up and drizzle 1 tablespoon of the honey over them. Roast, basting occasionally during the second half of the cooking, until the juices run clear when the thigh or leg is pierced, about 50 minutes.

Meanwhile, in a large skillet, warm the remaining 2 tablespoons of olive oil over medium heat. Add the shallots and a pinch of salt and sauté until the shallots are translucent, 2 minutes. Add the apple slices and sauté until they begin to soften, 3 minutes. Stir in the broth, lemon juice, mustard and remaining tablespoon of honey. Simmer, stirring, until the sauce has thickened and the apples are tender, about 3 more minutes.

To serve, transfer the apple mixture to a deep platter and arrange the chicken on top.  Serves four.

HONEY APPLE CAKE**

Ingredients:

3 large eggs

3/4 cup honey

1/2 cup white sugar

1/4 cup light brown sugar

1 1/4 cup canola oil

1 1/2 tsp vanilla

3 cups all purpose baking flour

1 tsp baking powder

1 1/2 tsp cinnamon

3/4 tsp salt

1/4 tsp allspice

Dash of ground cloves

4 Granny Smith apples – peeled, cored, and shredded

Icing Ingredients:

1 cup + 3 tbsp powdered sugar

1/4 tsp vanilla

1-2 tbsp non-dairy creamer

Other tools needed:

9-inch Bundt cake pan, sifter, wire cooling rack, parchment paper, Ziploc bag.

Directions:

Preheat oven to 325 degrees. In a large mixing bowl, beat the eggs until they are frothy. Whisk in the honey, white sugar, brown sugar, oil and vanilla. In a separate medium mixing bowl, sift together the flour, baking powder, baking soda, cinnamon, salt, and spices. Incorporate the flour mixture into the liquid, stir to blend. Fold in the shredded apples.  Cooking time is 75 minutes.  Serves 10.
